Is there any great benefit of fitting this stuff to intercooler piping? obviously it keeps heat out but would the pipes get that hot in the first place if the car was driving?

I was going to fit it to tidy up the engine bay a bit and to insulate the pipework from any heat under the bonnet

i would at least do the piping on the hot side of the cooler but think it would all benefit as they do get fairly warm in the bay

Under boost the air that exists the turbo will be hotter than that pipe will ever get from the manifold etc around it, so no. IMHO It's unnecessary.
